Instructions
Peel and roughly chop 0.5 potato and 0.25 fresh onion |
Wash 0.5 broccoli with cold water and roughly cut into medium-sized pieces |
Add 0.5 teaspoon olive oil to medium-sized saucepan and heat carefully over high heat until hot |
Add onions into saucepan and sauté on high heat until soft |
Add potato and broccoli to onions and sauté on medium heat for 2 minutes |
Prepare 175 millilitres chicken stock according to instructions on packaging |
Pour stock and 50 millilitres whole milk gently over sauteed vegetables and boil the mixture on high heat for 2 minutes |
Cook broccoli soup on low heat for 12 minutes |
Let soup cool down to room temperature |
Blend soup with hand blender until smooth |
Bring soup to the boil over high heat |
Season soup lightly with 0.25 teaspoon ground black pepper |
