The ideal storage temperature for tomatoes is 12 to 16 degrees Celsius. When they are stored in the fridge, the cold temperatures stop the ripening process. This is great to keep ripe tomatoes a bit longer but has some impact on the taste. If you have unripe tomatoes, store them in a warm place with direct sunlight to ripen them.

Wash and chop 2 grams fresh coriander into pieces of about 1 cm |
Peel and finely chop 1 fresh onion |
Wash 1 green chili and 2 fresh tomatoes and cut them into pieces of around 0.5 cm |
Add 2 tablespoons olive oil to a medium-sized frying pan and heat up over high heat until the oil is hot |
Add the onions and chili to the hot oil and sauté them over high heat for 3 minutes |
Add the tomatoes to the frying pan and sauté the vegetable mixture over medium heat for 5 minutes |
Crack open 4 eggs into a medium-sized bowl and whisk them well |
Season the onion tomato mix with 0.5 teaspoon salt, 0.5 teaspoon garam masala, 1 teaspoon ground coriander and 0.25 teaspoon chili powder and sauté the Bhurji over medium heat for 1 minute |
Add the eggs to the frying pan and stir the mixture lightly for 5 minutes |
Sprinkle the fresh coriander over the egg mixture and serve the Egg Bhurji on plates |
