Rocket (or arugula) has its origin in the Mediterranean region where it is still popular in the Italian cuisine. The plant is related to cress and cabbage and contains plenty of iron, vitamin A and vitamin C. The pungent flavour results from the aldehydes in the plants, which will inactivate quickly when cooked.
